Nutritional Value of Some Algae in Egypt

摘要:<正>Seaweed is widely used for food in direct human consumption.It is also an ingredient for the global food and the cosmetics industries and is used as fertilizer and animal feed additive.Total annual value of production is estimated at almost US$ 6 billion of which food products for human consumption represent US$ 5 billion.They contain almost all of the important nutritional components,but also contain them in levels that often far exceed their terrestrial counterparts vegetables.Typical nutritional analyses of seaweeds have identified high levels of carbohydrates,minerals, vitamins,and trace elements such as iodine as well as they contain numerous bioactive properties including cholesterol-lowering and free radical scavenging activities.In addition,they can strengthen kidney function,improve mental concentration,can even promote sexual function,protect against cancer and can be helpful in aiding the elimination of nuclear radiation from the body.Use of seaweed as food has strong roots in Asian countries such as China,Japan, Korea,North America,South America and Europe.But in Egypt,seaweed is mostly used as food additive to fish meal.However,their health benefits are not in doubt,but Egyptians are generally not prepared to compromise on taste and aroma.But due to many problems that faces Egypt,of which lack of food is the most threatening.Yet it is noteworthy that Egypt should take into consideration to develop food industry and use of seaweeds as functional nutrient and encourage Egyptians to incorporate them in their diets as alternative of other ones more expensive and much lower in their beneficial effect.However,nutritional value of seaweeds has been investigated in a limited number of articles in Egyptian Mediterranean and/or Red Sea.Further studies on functional products need to be carried out on Egyptian seaweeds,especially as many of them are still unexploited even though they are highly diversified.
